I

know: one of the hardest things about being vegan, and also one of the most common reasons for staying vegetarian, is saying goodbye to all kind of dairy products.

Personally, before going vegan, I started to feel that I was struggling with my diet when I just realized that milk and cheese were really bad to me. Of course, at that time, I had no knowledge about the dairy industry and the horror behind that. Each time I had milk, butter or cheese I just felt really tired, and also my skin wasn’t reacting good (acne or blemishes). So I just decided to quit milk & co. Best decision ever!

But being vegan does not necessarily mean to don’t have other options or alternatives. More and more brands offer today many products as vegan cheese. Since I am never happy with their ingredients or nutrient profile, I prefer making my own vegan cheese.

This almond spreed cheese is really easy to make and can be your first step into making your own vegan cheese!

Almond spread cheese

  • Servings: 1 small jar

Ingredients

  • · juice of 1/2 lemon
  • · 1 + 1/2 cup almond flour (blanched)
  • · 1 tsp locust bean *optional (it helps to stabilize the texture)
  • · 1/4 cup rice oil (or olive oil)
  • · 1/2 cup oat milk (or soy milk)
  • · 1/2 tsp salt

Directions

  1. simply blend all the ingredients for about 10 minutes (also pulsing ).

Tips: try it with some of your favorite herbs, as herbs of Provence!
