Ramson Lemon Fettuccine

Pasta is the Italian queen of comfort food!

Have you never heard the word “spaghettata“? You need really few “ingredients” to make spaghettata happening: good friends coming over, spaghetti, a big pot, garlic, parsley, olive oil and chili pepper. Spaghettata is something that we do improvise in Italy and everyone can be involved during this ritual: who chops the parsley, who cooks the pasta, who takes care that the garlic is not going to turn black on the hot pan.

I’ve thought to make a “next level”version replacing the parsley with another seasonable herb that I love: ramson, also known as wild garlic. Here in Berlin is the perfect time to find the Bärlauch, in Italy called aglio orsino. The flavor is really garlicky and also spicy and with this herbs, you can also make a good pesto. I suggest giving a try to this herb if you never had the chance before because it’s totally a new experience for your palate.

Because the simple ingredients, the main purpose of spaghettata is cooking something very popular – spaghetti-, yummy, with basic ingredients that everyone has at home: nothing fancy but something fast that does not stress the host!

Ramson Lemon fettuccine

Ingredients

  • fresh ramson (wild garlic)
  • 1 lemon (zest & juice)
  • 1 garlic
  • ginger
  • olive oil
  • pepper/cayenne pepper
  • nutritional yeast (optional)
  • pine nuts
  • wholemeal fettuccine or spaghetti

Directions

  1. grate the garlic and a piece of ginger
  2. on a pan add 2 Tbs olive oil, add the garlic, the ginger and stir-fry until golden.
  3. chop the ramson stir fry it together with the garlic and the ginger
  4. add the lemon zest the juice and stir-fry for about 5 minutes
  5. add the salt, the pepper, and a 1/3 cup warm water
  6. add other 2 tbs olive oil
  7. cook the pasta according to the instructions (al dente)
  8. serve with some fresh ramson leave, olive oil, pine nuts and nutritional yeast.

Tips: you can top it also with some bread crumbles slightly sautéed with olive oil and salt.
