Time to clean your liver with artichokes

Today’s recipe is perhaps one of the simplest because it requires only a few ingredients and allows us to explore the structure of the artichoke including cooking times. This is the first time in my blog that I present a recipe involving artichokes. There are vegetables that I recognize I fear for the simple reason that they are so rooted in my imagination of traditional cuisine to observe them with respect as holy cards in the middle of the bible. My mother cooks artichokes in different ways and she doesn’t back down to their mysterious appearance because of the spikes. Artichokes au gratinIt is very important to clean the artichokes well, depriving them of the outer leaves, hard and not edible, and cutting from above 1/3 to remove the thorns. Thanks to their recognized purifying properties, artichokes, which are rich in bioflavonoids, also help to cleanse the liver by eliminating toxins. Use, therefore, the precious and green cooking water as a herbal tea to drink during the day!

Artichokes au gratin

  • Servings: 4 person

Ingredients

  • 6 artichokes
  • fresh herbs (or only parsley) – chopped
  • olive oil
  • 1/2 lemon
  • 1/2 cup wheat germs
  • 1/2 nutritional yeast
  • 1/2 cup almond flour
  • salt & pepper
  • pine nuts

Directions

  1. remove the tough outer leaves and the stems
  2. cut off about 1/3 from the top
  3. rub the cut area with a lemon
  4. cook in hot water for about 40 minutes
  5. pre-heat the oven to 180°
  6. meantime mix the wheat germs, nutritional yeast, almond flour, 1 tsp oil, 1 tsp salt, 1 tsp lemon juice (this will be the gratin mixture)
  7. finely chop some fresh herbs
  8. cut in half the artichokes
  9. brush a baking tin with olive oil
  10. lay all the artichokes and cover with the gratin mixture and the chopped herbs
  11. add some toasted pine nuts
  12. add pepper and olive oil and bake for about 20 minutes.
